Wine Making

Interested in making your own fine wine at home? Winemaking is an ancient art, where the end result has been enjoyed by people for hundreds, if not thousands of years, all over the world. From wine kits, wine recipies, to fresh grapes, or grape concentrates, there are many different ways to make wine. Winemaking can be a novel experience in it's planning, making, tasting, and by the sharing with others, adding to the joy of having a good time with good company. Nowadays, the quality of home made wines is better than ever.

The essential steps in winemaking can be summarized as follows:
1.Extract the flavor and aroma from the bast ingredients by chopping, crushing, pressing, boiling or soaking them.

2.Add sugar, acid, nutrients, and yeast to the fementation media or liquor to achieve the proper ratio and ferment, covered, for 3 to 10 days in a primary fermentation vessel (crock, jar or polyethylene pail) at 70-75 degrees Fahrenheit.

3.Strain off the liquid from the pulp, put it (the liquid) into a secondary fermentation vessel (a carboy or jug), fit a fermentation trap (airlock) on the mouth of the bottle, and allow fermentation to proceed at 60-65 degrees Fahrenheit until all bubbling ceases (after several weeks).

4.Siphon the wine off the sediments (lees) into another clean secondary fermentation vessel. Reattatch the fermentation trap. Repeat after another 1 or 2 months and again before bottling.

5. When wine is clear and all fermentation has stopped, siphon into wine bottles and cork the bottles securely. Leave the bottles upright for 3-5 days and then store them on their side at 55 degrees Fahrenheit for six months (white wine) and a year (red wine) before sampling. If not up to expectations, allow to age another year or more.

You can make this process as complicated and thorough as you please, but in fact it need not be. Wine recipies have been developed over the centuries which pretty much makes this a simple process of measuring, squeezing and siphoning, Further, while some recipies seem to try to make the whole process seem tedious, exacting and highly technical, others try to get you from fruit to wine a simply as possible. Use the wine recipies as guides and measure and adjust any variables you can. If you do this, your wines will generally be better and you'll quickly learn the ins and outs of winemaking more thoroughly than if you just followed the recipies. If you follow them precisely you will make decent to good wines. If you make adjustments as needed, you should be able to make very good to exceptional wines.

Home winemaking is an exciting and rewarding hobby. It's fun to make and it saves you money. Today there are many thousands of enthusiasts making wines many of which are comparible , or even better than, commercial products. Standards are steadily rising and many winemakers are making wines of such high quality, that they are only too happy to share them with absolute pride.
